This coffee is the result of a collaboration we’re really proud of. We’ve teamed up with The Foundry, an independent distiller in Canterbury, Kent, to create something truly unique – coffee and whisky brought together in one cup.
Our chosen coffee is a Colombian Dulima, known for its natural chocolate and caramel sweetness. The Foundry’s single malt whisky is handcrafted by Jon using English barley and wild yeast from the historic St Augustine’s Abbey, then double distilled and matured in a first-fill ex-Bourbon barrel from Kentucky. The whisky itself carries notes of honey, vanilla and soft oak, with a smooth and rounded finish – a beautiful match for the Dulima beans.
The process takes patience. For three weeks, we rest green coffee alongside glasses of The Foundry’s whisky, turning the beans daily and topping up weekly. Slowly, the beans draw in the whisky’s depth of flavour before being roasted fresh in our small roastery.
The finished cup reflects both crafts at their best: indulgent chocolate and caramel from the coffee, enriched by the whisky’s honeyed sweetness, vanilla warmth and subtle oak character. It’s a genuine meeting of roastery and distillery.
