Crafted by the renowned Alvarez family alongside head cupper Luis Rodriguez, this washed lot is sourced from 19 Rainforest Alliance–certified farms positioned along the Apaneca-Ilamatepec mountain range, including the slopes of the iconic Santa Ana Volcano.
Cherries are hand-picked and delivered fresh to the historic El Borbollón mill, where they’re washed, floated for quality separation, and pulped before a slow overnight fermentation. After a clean water wash (fully recycled within the mill), the beans are patio-dried for 8–10 days — with extended-drying techniques now being introduced to unlock extra complexity and fruit character.
Once rested, the parchment coffee is expertly hulled and then hand-sorted by a skilled team of local women, paid above minimum wage and trained to remove even the smallest defects — ensuring only the finest beans make it to the final bag.
