Rum Infused Colombia Dulima x The Foundry

This coffee is the result of a collaboration we’re really proud of. We’ve partnered with The Foundry, an independent distiller in Canterbury, Kent, to create something truly unique – coffee infused with the character of their award-winning Gamecock Rum.

Our chosen coffee is a Colombian Dulima, known for its natural chocolate and caramel sweetness. The Foundry’s Gamecock Rum is a Double GOLD World Rum Award winner, created to celebrate the restoration of the historic Whitstable Gamecock Oyster Yawl.

Applying the same care and attention that defines everything Jon crafts, this original dark rum is first aged in a first-fill Bourbon cask, then matured further in Virgin American Oak, and finally finished in Virgin English Oak, building layers of brown sugar, warm spice, toasted oak and deep, rounded sweetness.

The process takes patience. For three weeks, we rest green coffee alongside glasses of The Foundry’s Gamecock Rum, turning the beans daily and topping up weekly. Slowly, the beans draw in the rum’s complexity and depth before being roasted fresh in our small roastery.

The finished cup is a true meeting of crafts: indulgent chocolate and caramel from the Dulima, enriched by the rum’s rich brown sugar body, warming spice, and elegant oak influence from the three-stage cask ageing. It’s a fusion of roastery and distillery, brought together with care and intention.
