Discover the vibrant and complex flavours of Goatherd Coffee's Mexico Selección Yajalón, a unique offering from the lush, high-altitude farms of Yajalón, Chiapas. Sourced from small-scale farmers cultivating plots between 1,350 and 1,700 metres above sea level, this coffee showcases the region's rich biodiversity and deep cultural heritage.

Tasting notes reveal a delightful combination of crisp green apple, refreshing cucumber, and the unexpected effervescence of cola, all rounded off with a smooth toffee finish. The farms in this area grow traditional varieties like Bourbon, Marsellesa, and Pacamara, each contributing to the distinct character of this coffee.

Yajalón is a region steeped in history and natural beauty. Located near the famous Palenque City, known for its stunning Mayan ruins, the area is home to the Tzeltal people and a wide range of native wildlife, including hummingbirds, ocelots, and black howler monkeys. Coffee, or "cajpe" in the Tzeltal language, plays a vital role in the local economy, connecting these communities to the world.

The coffee is carefully harvested, with cherries picked at peak ripeness, de-pulped, and fermented for 12-17 hours before being washed and sun-dried. This meticulous process, combined with the unique growing conditions, results in a coffee that is both distinctive and memorable. Indulge in the taste of Yajalón and experience the vibrant flavours of this remarkable region with every sip.
