Region Profile:

Nestled in the picturesque departments of La Paz, Comayagua, and the southern part of Santa Bárbara, the La Paz region is famed for its ideal coffee-growing conditions. Named after the majestic Montecillos mountain, this area benefits from a unique climate and landscape that contribute to the production of high-quality coffee.

Main Coffee Varieties:

- Catuaí
- Ihcafe 90
- Caturra

Our dedicated producers cultivate their farms with sustainable and environmentally friendly techniques. These farms boast varieties resistant to the region's climate, pests, and weeds, ensuring a robust and reliable harvest. With a production capacity of approximately 1800 quintals (83 metric tonnes) of green coffee, we guarantee a steady supply of this exceptional coffee for our customers. Our commitment to technical assistance ensures continuous improvement in farm management and coffee quality, resulting in superior cup profiles.

Sustainable and Traditional Processing:

The producers of Honduras La Paz Montecillos are deeply rooted in their coffee-producing heritage, generating employment and supporting their communities. Their farms, once small plots inherited from their ancestors, have expanded over the years, preserving a legacy of excellence.

The ecological washing process employs modern yet sustainable techniques. Utilising ecological pulpers, the coffee undergoes continuous pulping and washing before being transported to traditional running channels. Here, a stream of water and a rake are used to wash the coffee, removing any damaged or unripe beans. This meticulous process ensures the highest quality beans are selected.

Meticulous Drying Process:

The drying of our coffee is a critical step in achieving its exceptional flavour. La Paz Montecillos coffee is dried on patios using blankets or Zaran. The beans are carefully spread out and turned regularly with wooden rakes to ensure uniform drying. This method preserves the beans' unique characteristics and enhances their quality.

Experience the Legacy:

By choosing Goatherd Coffee's Honduras La Paz Montecillos, you are not only savouring a cup of premium coffee but also supporting a tradition of excellence and community development. Each sip tells the story of dedication, heritage, and the unparalleled passion of our producers.
