At Goatherd Coffee, we bring you the finest beans from the scenic highlands of Ayarza, Santa Rosa. This washed lot has been carefully processed at our cherry mill, where we work with local farmers to ensure the highest quality, paying a premium for perfectly ripe cherries. By centralising the processing, we can guarantee consistency and excellence in every cup.
One of our key partners is Francisco Nájera, a skilled coffee producer from El Naranjo, Guatemala. Despite farming on less than 1 hectare of land, Francisco's dedication and entrepreneurial spirit have earned him a reputation for producing exceptional coffee. He also runs a coffee tree nursery, helping other farmers thrive in the region.
Ayarza is not just a coffee-producing region; it's a place steeped in natural beauty and legend. Nestled between two collapsed volcanoes, the cold blue waters of Laguna de Ayarza and Laguna Azul create a unique environment for growing coffee. We believe this special landscape is reflected in the vibrant flavours of our beans.

At the heart of our process is a commitment to quality. Our washed coffees undergo a meticulous process to enhance their unique flavour profiles. Each bean is carefully picked, floated, and sorted before taking one of two fermentation paths. These methods result in two distinct flavour profiles – a bright, fruity ‘Vinoso’ with a wine-like acidity, or a sweeter, more full-bodied ‘Classic’ profile.
